Macaroons

Ingredients
200 Gms Butter
3 Cups Desicated Coconut Powder
1 Cup Self Raising Flour (Homepride Brand)
Half Cup Sugar
2 Tsps Vanilla = 2 caps of the bottle
1 can condensed milk – 1 big Nestle can -395gms)
3 eggs
Method
In a vessel melt the butter and keep aside. In another vessel mix well Desicated coconut, Self raising flour and 1/cup sugar (powdered). To this add the Nestle sweetened condensed milk, add the melted butter and mix all ingredients well again. In a separate bowl take the 3 eggs and beat them well and add the Vanilla. Pour this into the ingredients and mix again all and keep aside for about a couple of hours. Next scoop the mixture into the small baking cups and bake them for about 30 minutes at 240 degree centrigrade oven temperature and serve.
Pancit Bami (Mixture of 2 types of noodles – Phillipino Style)
1 packet Chinese Noodles Pancit Canton
1 packet Pancit Bihon – Rice Sticks (preferably UFC Brand or Newton brand)
Preferred soya sauce is Swan soya sauce (made in Phillipines)
1-1/2 tsp Ginisa (packet) (All purpose seasoning mixture)
1 cup gluten (chopped) (when gluten is prepared you will have some gluten water)
15 to 20 tender green beans (cut lengthwise thin and long)
2 carrots (cut lengthwise thin and long)
½ capsicum (cut lengthwise thin and long)
Half cabbage (cut lengthwise thin and long)
1 stem of Spring Onions (chopped)
½ onion sliced (chopped into fine pieces)
3 garlic flakes (cut into fine pieces)
½ Pepper powder
Separately keep ready the Bihon by dipping it in the cold water for 2 minutes and cutting it into the required length.
In a vessel add 1 tbspn oil, once hot add the onion and make it translucent, now add the garlic, add the gluten, soya sauce and mix all. After which add the Ginisa seasoning mix and cover the pan and keep on slow fire for 10 minutes. Now to this add the pepper powder and pour the gluten water. Now add the carrot and beans cook it for a couple of minutes and the cabbage and the capsicum and mix well.
In another vessel take 1-1/2 cup boiling water and add the soya sauce + 2-1/2 tbspn oil. Add the Bihon noodles + the Pancit Canton and mix well. Mix the contents from the 1st vessel into. Add some seasoning if required. And serve.
