PURI BHAJI

Puris
Ingredients

  1. Brown Flour
  2. Some white flour
  3. Salt
  4. Water
  5. Oil


Method

Take some brown flour along with white flour (¼ the quantity of the brown flour). Pour water and knead well till fully mixed. Then add some oil and knead again. The kneaded flour should not be very wet. Make lemon size balls and roll them into round shapes. Pour oil into a wok and when the oil is well heated place the rolled puris into the hot oil and fry.


For Potato Bhaji

2 capsicums

3 potatoes

3 medium size onions

1 bunch coriander leaves

2 green chillies

10 curry leaves

1 tsp turmeric powder

Few cashew nuts

Vegetable stock (optional)

Butter (optional)

Some oil

Method

De-skin the cooked potatoes and mash them. Cut the capsicums into square pieces. Chop the coriander leaves, green chilies and set aside separately.

Take a pan and pour oil into it. Once hot add mustard seeds and urad dhal , then onions and fry till light brown. Then add the green chilies and curry leaves and fry lightly add the Capsicum, cashew nuts. Finally add the potatoes and pour some water mix and cook for 5 mintures. Add salt. Add butter if needed. Serve.
